Everything you need to know about hake

Ask any fishmonger what their favourite fish is and hake will come up every time. Wild caught from the cold clean waters of the Irish Atlantic, hake has a delicate sweet flavour and a beautifully fine flake that works with almost any cooking method. It is versatile, sustainable, affordable and genuinely delicious. Yet somehow it remains one of Ireland’s most overlooked fish. Walk into any fish market in Spain or Portugal and hake is the star of the counter — prized above almost everything else. In Ireland it is often passed over in favour of cod or salmon. This is a mistake we are on a mission to correct. Hake belongs on your plate every week and here is everything you need to know about it.

“Hake is the fish that chefs love and home cooks have yet to discover. Once you try it. it becomes a weekly staple”

Hake is a round white fish from the same family as cod. It has a longer more slender body, a softer finer flake and a more delicate sweet flavour than cod or haddock. It is caught wild by Irish trawlers along the west and southwest coast, particularly in the waters off Cork, Kerry and Galway. The best hake in the world comes from the cold clean North Atlantic and Irish hake is among the finest. It is in season year round but is at its absolute best from autumn through spring. At Seafood.ie we carry wild Irish trawl-caught hake pin boned and skinned — prepared by hand by our fishmongers every morning. It roasts beautifully with cherry tomatoes and capers, pan fries in four minutes with butter and lemon, poaches gently in a light broth and holds up wonderfully in a simple tomato sauce. It is the most versatile fish on our counter and we recommend it to every customer who has not yet discovered it. Available fresh online with next day delivery nationwide.
